Ripe fruit bonanza. Cooked pear and cooking spices like cinnamon and vanilla give this wine depth and complexity. Finishing with hints of orange peel. Quietly complex and delicious.
WINEMAKING NOTES:
Obtaining Certified Organic Qualifications in 2020, all estate fruits are grown under strict organic principles without the use of toxic chemicals.
The fruit was picked at optimal ripeness, pressed into tank to settle, then racked into stainless tank for a long and cool fermentation with native yeast. The cool fermentation allowed the wine to preserve its aromatics and freshness. Racked to old puncheons for aging and some occasional battonage. after aging, the wine was blended back to tank before filtration, and finally, bottling
